Kid (and Mom) Approved Pumpkin Muffins!

Are you a lover of Fall?! I am and I LOVE the smells! I also love cooking and baking so fall is by far my favorite because I get to combine both of those!

Our local Aldi just reopened so that made trying these recipes easy on the pocket book, which is always a plus!

Pumpkin Muffins

 (all items can be found at Aldi!) 

12 Muffins

1 & 1/3 cup Flour

3 TBSP Ground Flax

3/4 tsp Baking Soda

3/4 tsp Baking Powder

3/4 tsp Cinnamon

1/4 tsp Salt

2 Large Eggs

1/2 Milk (I used almond milk)

1/4 cup Pure Maple Syrup

3 TBSP Butter

1 tsp pure Vanilla

1/2 cup Pureed Pumpkin

*I added chocolate chips! 

Pre-heat Oven 350 degrees

Line muffin tin with muffin liners (easier clean up, plus it makes these muffins a perfect option to grab and go!)

Combine flour, flax, baking soda, baking powder, cinnamon, and salt into medium bowl and mix

Combine beaten eggs with milk, maple syrup, melted butter, vanilla, pumpkin, and mix until combined

Slowly add flour mixture into egg mixture

Add one scoop per muffin tin

Bake for 14-16 minutes

Remove from muffin tin and cool… ENJOY!
