I love to cook and love to try new recipes, this recipe was a spin on a dish my dad used to make in our house growing up. I made it a little more romantic and Date Night-In friendly.
Breaded Pork Chops, Shrimp, Veggies, and Noodles!
2-4 Thin Pork Chops (4 if you want leftovers)
1/4-1/2 can or box- Breadcrumbs (I used panko they get a bit more crispy)
10-20 Shrimp (thawed, detailed, and deveined)
Garlic & Butter
Angel Hair Pasta (Or pasta of choice)
Veggies of choice (I used artichoke hearts, green onion, mushrooms, and tomatoes)
Thaw & Tenderize pork chops- Grab your cutting board, a piece of saran wrap, and a rolling pin, then pound on the pork chops to make them thinner. (this will speed up the cooking process and allow them all to cook at about the same time)
Prepare Shrimp- Thaw, detail, and de-vein and set aside until marinade is ready.
Make marinade for Shrimp- Melt desired amount of butter in the microwave, add garlic and let cool down for about 5 minutes. (if you add the shrimp right away they will cook in the hot butter) After butter is cooled add shrimp and let sit for 20 minutes before cooking.
Prepare Breading Station- in 1 bowl add 2 eggs and a splash of milk and whisk together. In the second bowl add 1/2 of your breadcrumbs.
Prepare pan for pork- Turn pan on medium high heat with 2tbsp of olive oil, then prepare your 1st set of pork to be cooked.
Prepare noodle water- cook noodles according to package instructions.
Dip pork in egg mixture and then in breadcrumb mixture, make sure the pork is fully coved with breadcrumbs and then add it to your hot olive oiled pan.
Cook on each side for 5-6 minutes, once the pan is hot turn down to medium heat, otherwise you will burn 1 side or the whole second batch of pork chops.
Prepare veggies; for the veggies I used I drained the artichoke hearts and chopped them up into bite sized pieces, washed the mushrooms & green onion and cut them up as well. Added the green onion to a sauté pan with 1 tbsp of olive oil, then added the artichoke hearts 4-5 minutes later, and then the mushrooms 3-4 minutes later. I saved the tomatoes to put on top fresh. (If you wanted to do different veggies you could, and cook them how you wish.)
Cooking the shrimp- You can grill them for 5-7 minutes on a hot grill, you can bake them in the over at 350 for 10-15 minutes, or you can sauté them on the stovetop for 7-10 minutes
Now its time to watch all these components finish up their cooking and then add them together on your plate. Drain the noodles when finished cooking, pull the pork chops off the hot pan when they are golden and cooked through, pull the shrimp once that are cooked to your liking, and of course we can not forget about our veggies. Now that all of our goodies are cooked to your liking you can enjoy this delicious dinner with your loved one. Don’t forget to add your favorite glass of wine or drink of choice! I also highly suggest some type of delicious dessert I would chose cheesecake!
